Good egg

Amanita Caesarea

The only Amanita that can be picked. Hat smooth orange-red, yellow lamellae, stem and ring, white sack volva at the base. When young it is a white egg: it should always be cut lengthwise.

How to recognize it

    Cappello arancio-rosso, liscio, con striated margin comb-like; usually without warts, because the veil remains down in the volva.

    Yellow lamellae, dense and free; yellow stem with yellow, wide, dangling ring: no dangerous lookalike has this yellow.

  3. 03

    Base wrapped in a white, membranous, sac-like volva and free; white flesh, yellow under the cuticle, which does not turn.

How is it different from other amanitas?

Warm and bright woods of chestnut, oak and holm oak; clearings and sunny edges.

From the sea to the mid-mountain, usually below 1,000 m; species thermophilic.

Greenish scab

Olive-green hat, white slats, white stem with white ring and sac-shaped volva. In the egg it is identical to the egg: when cut the outline is white, not yellow-orange. It's the fungus that kills the most in Italy.

Evil egg

Amanita muscaria
toxic

Red hat with white warts, white lamellae and stem, white ring, base with rings and not a sac-like volva. Warts wash off in the rain: always check the lamellae.

Brown scaly

Amanita pantherina
toxic

Brown cap with white warts, white slats, striated margin, white ring and base with small circles: the colour is deceiving at the end of the day, the white underneath is not.

The tradition of the egg raw in salad It only makes sense with already opened mushrooms, identified with certainty and in small quantities: in a closed egg the risk of confusing it with a deadly Amanita is maximum.
